The self serve buffet is definitely one of the most popular serving styles because it allows the guest to decide portion sizes for themselves but also helps to move through the line much more proficiently and is helpful when time is very limited. 

The "Attended" or "Active Station" is definitely a favorite because it offers guests the feeling like their meal was created specifically custom for them.  This style is best designed for smaller groups or for gatherings that do not require that all guests dine and finish at the same time.
